Coleslaw is a summer picnic and potluck staple. It is always nice to have on hand when you have a BBQ at home as well. My son is a huge coleslaw fan which has led me to experiment with several different recipes. It really not hard to throw together and its actually good for you. I try to go light on the mayo for a reduced fat version or I make a vinegar style coleslaw for some extra tang and health benefit.
Coleslaw is one of those dishes that seems to always make a ton (maybe I should not get the biggest cabbage at the market). That being said, you can actually freeze left over coleslaw which is handy when your child comes home and tells you he needs a potluck dish for a school lunch the next day.
Can You Freeze Coleslaw?
Keep in mind that if you are going to freeze coleslaw, it is best to make a version with a vinegar based dressing. It is not recommended to freeze coleslaw with mayonnaise in the dressing as it may taste different after freezing. There are more freezer friendly recipes for a creamy dressing if you prefer that over a vinegar dressing. The problem with mayonnaise is that it will separate when you freeze it and that changes the texture and the taste.
How To Freeze Coleslaw

You can also freeze your coleslaw as a dry mix and add dressing when you thaw it. To do that, simply place all of your chopped ingredients into a freezer bag. Remove all of the excess air and tightly seal it. It is a good idea to label it with the date so you know when it went into the freezer.
When you are ready to make your coleslaw just pull out the bag and thaw it in the fridge overnight. Add your dressing and serve!
There are several oil and vinegar dressings that make a super tasty coleslaw, and any of them can be frozen with success.
- Make your coleslaw (including the dressing).
- Use a freezer safe container or freezer bags to freeze it in serving sizes as once you thaw it you will not want to freeze it again.
- Remember to label your bag or container with the date.
How To Thaw Coleslaw
Thaw the coleslaw with dressing the same way (for a few hours or overnight in the fridge). It may be a bit watery if you have frozen it with dressing so it is a good idea to drain any excess liquid before serving!
