In the 70’s and 80’s this was kind of a problem because it was understood that milk was super healthy for growing kids, but lactose free options were pretty limited. Thankfully, over the years the milk alternatives have become fairly mainstream and delicious as well.
I have tried several different traditional lactose-containing milk alternatives, but soy milk is still my favorite. It has all of the healthy stuff and it tastes great. I love to make greens and fruit smoothies and adding soy milk gives my morning drink that extra boost of protein to keep me full all morning long. Soy milk can be purchased in cartons that have typically pretty long expiration dates. However, once that big carton of soy milk is opened up it needs to be consumed pretty quickly. Since I am the only person in the house that drinks soy milk, it can go to waste. I hate wasting the soy milk as I find it a little bit pricey so I decided I would try to freeze it.

How To Freeze Soy Milk
It is not the best idea to freeze soy milk but it works in a pinch and is better than having to toss it if it reaches the expiration date before you can use it up. The texture of soy milk changes after freezing and it may also lose some flavor. Some people do not find it as good after freezing but I use it in a smoothie with yummy berries so it works for me.
One thing to remember is that there is a large volume of water in soy milk. Since water expands when you freeze it, you will want to make sure that the container you freeze your soy milk in will allow for expansion.
It is a good idea to use an airtight container to freeze soy milk. Be sure to label your container with the date because soy milk should only be kept frozen for about 3 months. I like to freeze it in small, one time use portions so that I can just pull out exactly what I need.
How To Thaw Soy Milk
Thaw your soy milk in the fridge and make sure to mix it thoroughly before use. The water will separate from the other ingredients so you want to give it a good shake or stir to mix everything back in.
