My son has been completely in awe of his grandma’s ability to present fresh, warm homemade cookies in record time. He really did believe that she had some special cookie baking magic. When he got a little older, I had to let him in on her secret. She whips up several batches of her world famous chocolate chip cookie dough and freezes it for just those special “the grandkids are coming” times. She typically bakes a whole batch at time, but I have some other strategies to customize the cookie dough freezing process based on what works for you.
When freezing cookie dough, the first step involves recognizing the type of dough and how you will want to bake it. For instance, shaped sugar cookies will be frozen differently than chocolate chip cookies.
Freezing Cookie Dough For Rolling
When making cookie dough such as gingerbread or sugar that will be rolled and cut into shapes, it is best to freeze the dough into a ball or log for easy rolling once thawed.
- Simply mix up the dough according to your recipe and form into a log or ball. Be sure the dough is chilled by placing it into the refrigerator for about an hour.
- Wrap the cookie dough tightly in plastic wrap.
- Over wrap the dough with aluminum foil.
- Place the double wrapped cookie dough in a freezer bag.
- Label and place in the freezer.
- Simply mix up the cookie dough per your recipe.
- Line a cookie sheet with plastic wrap or parchment paper.
- Place the dough in cookie-sized portions onto the lined cookie sheet. Just as you would if you were baking them right away. Place the cookie sheet into the freezer for about 2 hours – just until the are frozen solid.
- Place the frozen cookie dough pieces into a freezer bag.
- Label and place in the freezer.
To bake the cookie dough, simply allow the log or ball or thaw overnight in the refrigerator. Once thawed, you can roll out the dough and cut into shapes as you desire. Bake the dough according to your recipe instructions.
Flash Freezing Cookie Dough
Freezing cookie dough like chocolate chip or any drop style cookie is made extremely easy with the flash freezer method. This method also allows you to bake as many or as few cookies at one time as you need.
Cookie dough that has been flash frozen does not need to be thawed before baking. Simply transfer the cookie dough to a cookie sheet and bake according to the recipe instructions. Baking frozen cookie dough will take a bit longer than thawed or fresh cookie dough so anticipate a slightly longer bake time. Don’t forget them though because burnt cookies are just not good.
